Ingredients

1.50 lbs ▢2 1/2 pounds turtle meat on the bone, or 1 1/2 pounds boneless
4 bay leaves
salt
1 cup flour
8 tbsp unsalted butter
2 celery stalks, minced
1 green bell pepper, minced
1.50 cups minced onion
4 garlic cloves, minced
1 18-ounce can crushed tomatoes
3 tbsp Worcestershire sauce
1 tbsp sweet paprika
½ tsp cayenne, or to taste
½ cup dry sherry
cup chopped parsley
2 hard-boiled eggs, chopped
Grated zest of a lemon
Black pepper
2 tbsp freshly squeezed lemon juice

Directions

Start by making the turtle stock. Put the turtle meat into a large pot and cover with 8 cups of water. Add the bay leaves and about a tablespoon of salt. Bring to a boil and skim the scum that floats to the top. Drop the heat to a bare simmer and cook until the turtle meat wants to fall off the bone, about 2 to 3 hours.

Remove the meat from the pot and pull it off the bones. Chop as coarse or as fine as you want. Strain the turtle broth and put it into a pot set over low heat to keep warm.

In a Dutch oven or other soup pot, melt the butter over medium-high heat and stir in the flour. Cook this, stirring almost constantly, to make a roux the color of peanut butter, which will take about 10 to 15 minutes.

Add the green pepper, celery and onion and cook for about 5 minutes. Add the garlic and cook another minute. Add the chopped turtle meat and stir to combine.

Stir in a cup of the turtle stock at a time until you the soup is the consistency of gravy. Add the tomatoes, Worcestershire sauce, cayenne and paprika. Add more turtle broth until the soup thins a bit. It should be thicker than water, thinner than gravy — like chicken and dumplings if you are familiar with that. Simmer gently for 15 minutes, or until the vegetables are soft.

Finish the soup with the sherry, parsley, lemon zest and hard-boiled eggs. Add them all, stir to combine and simmer for a minute or two. Add salt, black pepper and lemon juice to taste. Serve alone or with rice.

Ingredients

2 tbsp Vegetable Oil
1 Pheasant, whole oven ready
6 Shallots, peeled
3 Garlic Cloves, minced
3 oz Pancetta, diced
4 oz Crimini Mushrooms
4 oz Chestnuts, whole cooked
4 Juniper Berries
2 Bay Leaves
3 Fresh Thyme, sprigs
3 fl oz Chicken Stock
1 tbsp Butter, softened
1 tbsp Flour

Directions

1. Preheat a pan and add oil. Brown the pheasant all over. Season with salt and pepper, and transfer to a cast iron casserole.

2. Add shallots, pancetta and garlic to the pan. Stir fry until the pancetta becomes crispy. Transfer the mixture to the casserole.

3. Add the mushrooms, chestnuts, herbs, port wine and stock around the pheasant. Bring the mixture in the casserole to boil. Turn off the heat, and cover with a lid. Transfer the casserole to a preheated oven at 160°C and cook for about an hour.

4. When the pheasant is cooked, remove it from the casserole and let it rest.

5. Meanwhile, mix the melted butter and flour in a bowl. Add this to the casserole. Bring the sauce to boil. Reduce the sauce until it is syrupy. Remove the bay leaves and the thyme. Season with sea salt and freshly ground black pepper.

6. Cut the pheasant into quarters, and divided them between two warm plates. Spoon the chestnuts, pancetta, shallots and mushrooms on the side of the pheasant pieces, with a generous amount of sauce.

Ingredients

2 Quail, semi-boneless
1 tbsp Olive Oil
2 tbsp Butter
1012 Asparagus Spears
2 cups Frisee or Mixed Salad Greens
For the Marinade and Dressing
2 tbsp Honey
1 tsp English Mustard
4 tbsp Soy Sauce
1 tbsp Sherry Vinegar
5 tbsp Vegetable Oil
3 tbsp Sesame Oil
For the Potato Salad
2 tbsp Creme Fraiche
2 tbsp Mascarpone
1 tbsp White Wine Vinegar
2 Spring Onions, finely sliced
1 tbsp Olive Oil
300 g New Potatoes, cooked, peeled and halved

Directions

Method
STEP 1
Heat oven to 350°. Mix the marinade ingredients in a shallow bowl and set aside. Season the quail inside and out with salt and pepper. Heat the oil in an ovenproof frying pan, then brown the quail well on all sides. Add the butter and baste the quail. Then pop into the oven for 10 mins. Leave the quail to rest for a few mins until just cool enough to handle.

STEP 2
Using a large serrated knife, carefully halve each quail straight down the middle, then submerge in the marinade and leave to rest while you make the rest of the dish.

STEP 3
For the potato salad, mix the crème fraîche, mascarpone, vinegar and spring onions with some salt and pepper. Set aside. Heat the oil in a frying pan and sizzle the potatoes for about 5-10 mins, tossing occasionally until golden.

STEP 4
Transfer the hot potatoes into a bowl. Let cool slightly. Dress the potatoes with the crème fraîche mixture . Set aside.

STEP 5
Snap the tough ends off the asparagus, peel the stalks, then cut each spear in half at an angle. Bring a large pan of salted water to the boil.

STEP 6
Cook the asparagus in the boiling water for 2 mins until tender but retaining a slight crunch. Drain well. Place in a small bowl and, while still steaming hot, spoon over and toss through a couple tbsp of the marinade. You are now ready to serve.

STEP 7
Spoon half the potato salad into the center of a large dinner plate. Lift the quail from the marinade and lay 2 halves, breasts facing inwards, on top of the potato salad. Scatter the leaves evenly around the edge of the plate. Tuck the asparagus spears in a circular fashion among the salad leaves with the tips pointing out. Coat the quail and drizzle the leaves with a little more of the marinade, then serve.

1 Online, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
1 House of Smoke Smoked Whole Chicken, deboned and meat shredded or cubed
1 (8 ounce) package shredded Cheddar cheese (Optional)
1 (8 ounce) container sour cream
1 cup crushed tortilla chips

Directions

Place the onion, chili beans, black beans, corn, tomato sauce, beer, chicken and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Set cooker to low and cook for 2-3 hours.

Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
